Pancakes!

Who doesn't love pancakes?!
We thought we'd share our recipe with you for pancake day! You can get practically everything you need with us, making it great for anyone in your household who has dietary restrictions. We can also promise you wouldn't know they were free from if we hadn't told you to begin with.

You will need:
A frying pan or crepe pan
Ingredients:
125g plain or wholemeal self-raising flour*
150-200ml of dairy-free milk
2 tbsp of melted dairy-free margarine or coconut oil
1 heaped tsp of baking powder
A pinch of salt
Method:
Melt the margarine or coconut oil in a pan, then combine it with milk.
Sift flour, baking powder, and salt into a bowl and then make a well.
Pour the wet ingredients into the dry and mix well with a whisk; you may want to add more milk until the desired consistency is formed. You need a thicker batter for scotch pancakes and a thinner batter for crepe-style pancakes.
Leave to stand for a few minutes until the mix goes bubbly.
Heat a pan on medium to high heat with a little coconut oil. Add your pancake mix, and flip when the top of the pancake is dry and bubbles have formed. Cook for about 2 minutes on each side.
Keep an eye on the heat and adjust accordingly, adding a little more oil when needed.
Serve with blueberries and maple syrup, or whatever topping you fancy!
*This recipe can easily be made gluten-free, swap the self-raising flour for a gluten-free flour blend (Doves Farm gluten-free self-raising flour works well)
